Healthy Ice Cream

Ice CreamHow to make healthy ice cream?

You take :

-3 cups amasake 

-1 cup of cereal milk

-2 tablespoons agar agar flakes 

-1/8 teaspoon sea salt

-8 tablespoons of carob 

-1 tablespoon of tahini ( sesame paste, you also can use peanut butter)  

 1) Mix the amasake with the cereal milk till everything is smoot

2) In a saucepan, combine amasake/cereal milk, agar flakes, carob powder and sea salt. Whisk. Bring to simmer and cook slowly until agar is dissolved completely (20-30 minutes)

3) Remove from heat and stir in the rest. Whisk. Pour into shallow pan and cool until firm. (I’m using a shallow Pyrex.)

4) Add mixture to ice cream machine and churn until firm, about 30 minutes, and put it in the freezer.

The key ingredient is the agar: put too much and you will get an aspic, put not enough and you will get a bad sorbet.
