Green bean pickles

picklesAfter 10 days of eating only brown rice and water, I had a good idea for pickles: green bean pickles.
Take 1100 gr. green beans, 300 gr onion, 150 gr carrot,5 cloves of garlic, 2 inches fresh ginger, 3 clove pods, 3 juniper berries, 3 leaves of laurel, 1 table spoon sauge, 1 tea spoon of thyme, 60 gr natural seasalt.
Normally I use only 1% of the weight of vegetables but I know someone who uses 5% so this time I decided to put 4% salt.( correction 11 February 2010: 4% is far too much and slows down the natural fermentation, so next time I will go back to 1%)
Cook the green beans for 3 minutes, cut the onions in big rings and fry them in oil, cut the carrot in mini   cubes, crush the garlic. When the onions are fried, mix all ingredients very well and put it in your pickle pot: as you all know, I use the Perfect Pickler

this time I did not have enough vegetables to fill the whole pot, so I put a ziplog bag in it, filled with water and salt (see picture),  to have at least some presure on the vegetables.
This is the first time I use fried onions in a pickle recipe, so I am eager to know how it will turn out, but I have to wait at least 2 weeks before I can try them.
